Flavourful Chicken Bhuna Fry: A Taste Sensation

    Method of Preparation


    Marinate the Chicken 

    • Clean and pat dry 500-750 grams of chicken.
    • In a mixing bowl, add the chicken.
    • Add salt, turmeric, chilli powder, ginger-garlic paste, lemon juice as per taste and a tablespoon of ghee to the chicken.
    • Mix all the ingredients thoroughly until the chicken is coated evenly with the marinade.
    • Cover the mixing bowl with a lid and let the chicken marinate for at least 30 minutes to allow the flavours to penetrate the meat.

    Prepare the Bhuna Masala

    • Take a non-stick pan and add 1 tablespoon of whole coriander seeds, 1 teaspoon of peppercorns, 2-3 cardamoms, 1 tablespoon of cumin seeds, 2-3 cloves, and 1 teaspoon of salt.
    • Dry roast the spices on medium heat until they become fragrant and slightly browned. Stir constantly to prevent burning.
    • Once the spices are roasted, remove them from the heat and let them cool down to room temperature.
    • Transfer the cooled spices to the 500 ml Chutney Jar of Atomberg Mixer Grinder. The chutney jar features a "Coarse Mode” that replicates a traditional silbatta-like texture, perfect for achieving authentic home-style cooking textures in your chutneys, spices and pastes.
    • Grind the roasted spices into a fine powder to create the bhuna masala.

    Your homemade bhuna masala is now ready to be used in the Chicken Bhuna Fry recipe, adding depth of flavour and aromatic richness to the dish.


    Cook the Chicken

    • Heat some oil in a non-stick pan over medium heat.
    • Once the oil is hot, add the marinated chicken drumsticks to the pan.
    • Shallow fry the chicken until it turns golden brown on all sides, turning occasionally for even cooking.
    • Once the chicken is cooked and browned, remove it from the pan and transfer it to a bowl.
    • In the same pan, add chopped onions and sauté until they turn translucent.
    • Add a bay leaf and 3-4 peppercorns to the onions for added flavour.
    • Pour in some water to deglaze the pan and create a flavorful base for the curry.
    • Return the fried chicken drumsticks to the pan, ensuring they are submerged in the onion and water mixture.
    • Add 1 cup of Curd (yoghurt) to the pan for a creamy and tangy flavour.
    • Sprinkle 1 tablespoon of the prepared bhuna masala (from earlier steps) over the chicken and mix well.
    • Let the chicken cook in the curry for 2-3 minutes, allowing the flavours to meld together.
    • Garnish the Chicken Bhuna Fry with finely chopped coriander leaves for a fresh and vibrant touch.
