Method of Preparation
- Start by heating the tawa or frying pan on medium heat.
- Then dry roast the peanuts on the hot surface till slightly browned on the surface and fragrant.
- Remove from heat and store on a plate or large bowl, letting it cool.
- Then roast the red chillies in a similar way, dry roasting till slightly browned.
- Remove from heat and add to the same plate or bowl as the peanuts, spreading them out to cool faster.
- Dry roast the coconuts the same way until golden and impart a nutty roasted fragrance.
- Remove from heat and add to the same plate or bowl, remembering to space all the ingredients out for faster cooling.
- Roast the whole jeera seeds and the garlic cloves in the same way individually, roasting the garlic at the end.
- Roast the garlic till slightly bruised and charred on the surface.
- Set aside the plate or bowl containing all the dry-roasted ingredients to let everything cool completely.
- Once cooled, add them to the 500-ml chutney jar and add the salt.
- Fix the chutney jar to the mixer grinder, putting on the lid and securing it till the blue light lights up.
- Then grind in slow mode (using the coarse mode in the case of the Atomberg Zenova Mixer Grinder).
- Grind for about 20 seconds at a time.
- Then remove the lid, check the consistency and scrape down the sides of the jar.
- Grind for 10-20 seconds more, rechecking the consistency.
- Keep repeating till the peanuts have turned into the consistency you want.
- Remove the jar from the mixer grinder and transfer the contents to a bowl.
- Your dry peanut chutney powder is ready to be consumed.

- You can sweeten it up slightly by adding a teaspoon of sugar to the chutney jar. Adding sugar will give you the perfect combination of salty, spicy, and sweet.
- You can also dry roast white sesame seeds along with the other ingredients and add them to the jar to add another dimension of nuttiness to the final chutney powder.
- This dry chutney powder can stay safe to consume for many months if kept safe and secure in an airtight container. Using an airtight container will retain the flavour and the crunch of the peanuts, even months after making it.
- When grinding, you can turn it into a paste by adding small quantities of water. This will turn it into a flavourful sauce rather than a dry chutney, ideal for parathas and khakhras.
