Method of Preparation
Thai Papaya Multigrain Paratha
- Peel the outer green skin of a raw papaya and cut it into two halves.
- Remove the seeds from the centre of the papaya halves.
- Slice the papaya into wedges.
- Roughly chop some spring onions on a chopping board.
- Peel a ¼ inch piece of ginger and remove its outer skin.
- Take the Atomberg Mixer Grinder and use the chopper jar.
- Add the chopped papaya, spring onions, ginger, lemon grass stalks, bird eye red chillis, garlic cloves, and raw peanuts into the chopper jar.
- Add salt to taste.
- Chop the ingredients finely using the chopper jar until you achieve the desired consistency.
- Once chopped evenly, transfer the mixture to a bowl.
- Add multigrain millet flour to the mixture and knead it into a tough dough. If the dough is too dry, add a little water to achieve the right consistency.
- Divide the dough into equal portions and roll each portion into a ball.
- Dust the rolling board with wheat flour to prevent sticking. Using a rolling pin, roll a dough ball out into a circular shape.
- Heat a tawa (flat pan) on medium heat. Place the rolled-out paratha on the hot tawa.
- Cook the paratha on both sides until golden brown, and add a little butter or ghee on both sides.
- Once cooked, remove the paratha from the tawa and repeat the process for the remaining dough portions.
Peanut Chilli Chutney
- Dry roast 100 grams of raw peanuts in a pan on low flame until they turn golden brown.
- Let them cool down, and then transfer the peanuts to the Atomberg Mixer Grinder (Chutney Jar)
- Grind the peanuts on the third-speed setting of the mixer grinder for 2-3 minutes until they are finely ground.
- Open the jar and add ½ spoon of jaggery, 2 cloves of garlic, ½ inch of ginger, one tablespoon of sweet chilli sauce, one tablespoon of soy sauce, and the juice of 1 lemon.
- Grind everything together again on the third-speed setting for 5-7 minutes or until the mixture releases oil and becomes smooth.
- Add one tablespoon of red chilli powder and salt as per taste into the mixture in the jar.
- Grind the mixture again on the third speed setting for 2 minutes to blend all the flavours together.
- Transfer the prepared peanut chutney from the jar to a serving bowl.
- Top the chutney with sesame seeds for garnish before serving.
Cut the parathas into equal triangles or slices and serve them hot alongside the delectable peanut chutney.
